In Japan today, the kiridashi is used by almost everyone, from children to master craftsmen. In essence, it is the stationary counterpart to the Western pocket knife. 4034SS stainless steel
A middle - class stainless steel from Japan, whose higher chromium content ensures remarkable corrosion resistance. This steel is also relatively easy to grind and has relatively good wear resistance. It is often used for kitchen knives /cutlery or for rather smaller knives that are generally of good quality, but still offered at an economical price.
