These traditional Japanese kitchen knives are made from a high-carbon, high-cobalt VG10 steel blade and clad with 7 layers of Stainless Steel (410) on each side, resulting in an astonishing 15-layer Damascus blade. VG10 is known as the "Super Steel" as it maintains its edge longer than any other type of steel.
